Pecans, Sugar and Spice all combine with a few more ingredients to make candied pecans for family and friends. This is a Seems Like I Done It This-a-Way modified recipe.
Start with fresh pecans. I pick my own from this huge old tree in the yard behind the house. It’s nice if you can find a pecan tree owner who will let you pick on the halves (you pick all you want and then that much more, they get half and it costs you only your time).
The original recipe is as follows:
3 1/2 C Pecans
2 egg whites, stiffly beaten
1/4 lb butter or oleo
1 C Sugar
1 t Cinnamon
Dash of Salt
Toast pecans at 325′ F until golden brown. Blend sugar, cinnamon, and salt into egg whites. Stir in pecans. Melt butter in baking sheet. Spread pecan mixture over butter in pan and bake about 30 minutes (stir every 10 minutes) or until pecans absorb all butter.
Make first: Mix 1/2 cup white sugar with 3 tsp of ground cinnamon and set aside.
1 lb pecan halves
1 large egg white
3 Tbsp Flavored Whiskey ( I used Jim Beam Maple or a Vanilla Bean Soaked Makers Mark)
1 T Honey or Agave Syrup
1/4 C Cinnamon Sugar blend, and save the extra Cinnamon Sugar blend for later.
1/4 C brown sugar
1/4 tsp nutmeg
Dash of cloves
1 tsp of salt
Preheat oven to 250’F. Line baking sheet with silicone mat.
In a medium bowl combine 1/4 C Cinnamon sugar mix, 1/4 C brown sugar, nutmeg and salt, set aside.
In a large bowl, combine the egg white, whiskey and honey or agave. Whisk together until blended and frothy. Add the pecans and toss repeatedly to coat all pecans and no liquid is pooled in bottom of bowl.
Sprinkle 1/3 of the sugar mixture over the top of the pecans and toss them in the bowl until mixed. Repeat 2 more times. Pecans will still be wet so sprinkle in more of the set aside Cinnamon Sugar mix and toss until Cinnamon Sugar is all combined into the pecans.
Pour pecan mixture onto silicone lined baking sheet.
Bake for 1 hour and 20 minutes, stir every 20 minutes. The pecans are sticky until cool. Once cool, package them up in take out containers or cute bags for gift giving.
